Avocado And Egg Salad



I love avocados, and this is my favorite avocado and egg salad.

Ingredients:

avocados
boiled eggs
sun-dried tomatoes packed in oil (drained) 
salad greens of any choice
pine nuts
olives
salt, pepper
raspberry vinaigrette

Oh wow Olga, that looks delicious!! I love avocados too, I eat them almost everyday in my salads and sandwiches. Great picture!

That salad looks delicious, what a great combination of flavors and textures. I have two avocados ripening on the window sill right now! That will be my lunch in a day or two.

Yes, you really should try to visit Filoli when you can - especially since you enjoy your garden so much. You will leave there very inspired!
