1 ¼ cups sugar
½ cup butter or margarine, softened
2 eggs
1 ½ cups mashed very ripe bananas (about 3-4 medium bananas)
½ cup buttermilk
1 teaspoon vanilla
2 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped nuts (optional)
Heat oven to 350 degrees Fahrenheit. Grease bottom only of a 9x5-inch loaf pan.
In a large bowl, mix sugar and butter. Add eggs, bananas, buttermilk and vanilla; beat with electric mixer on medium speed until smooth. Stir in flour, baking soda, salt and nuts just until moistened. Pour batter into the pan.
Bake 1 hour and 15 minutes, or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from the pan to cooling rack. Cool about 1 hour before slicing.

Hi Olga, I have used this same banana bread recipe for many years. I must say it is delish. My thoughts are that everything taste great with buttermilk. I enjoyed your post.

This sounds just like the recipe we use. It's so good, and we always have ripe bananas so we always have a loaf on the counter. I love a piece warm from the toaster oven, with butter. Yum!
