Rainy winter days are perfect for kitchen experiments! My latest one was this candied orange peel.
It’s very delicious and so easy to make! I used the recipe from this site, but I decreased the amount of sugar.

3 oranges (washed)
2 cups water (divided)
¾ cup sugar plus more for tossing
Cut off the top and bottom of the oranges. Cut each orange into four or five vertical pieces and carefully remove the peel. Cut peel into thin strips.

Bring one cup of water to boil and cook the peel strips for 15 minutes. Drain and rinse them.
In a medium saucepan heat ¾ cups of sugar and one cup of water until boiling. Add the peel strips and cook for 45 minutes.
Remove the peels from the saucepan with a slotted spoon and leave them on a paper towel to dry for a few hours.

Toss the orange peel strips in sugar and leave on a wire rack to dry for 1-2 days. Store in an airtight container.

For a festive twist, you can dip the orange peel strips in chocolate.
