Double Tomato Bruschetta

This delicious appetizer is easy to make. I make it throughout the summer with tomatoes, garlic, and basil from my garden.

6 roma (plum) tomatoes, chopped
1/2 cup sun-dried tomatoes, packed in oil
3 cloves minced garlic
1/4 cup olive oil
2 tablespoons balsamic vinegar
1/4 cup fresh basil, stems removed
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 French baguette
2 cups shredded mozzarella cheese

Preheat the oven on broiler setting.

In a large bowl, combine the roma tomatoes, sun-dried tomatoes, garlic, olive oil, vinegar, basil, salt, and pepper. Allow the mixture to sit for 10 minutes.

Cut the baguette into 3/4-inch slices. On a baking sheet, arrange the baguette slices in a single layer. Broil for 1 to 2 minutes, until slightly brown.

Divide the tomato mixture evenly over the baguette slices. Top the slices with mozzarella cheese.

Broil for 5 minutes, or until the cheese is melted.

Ohhhh, I wish I was having THIS for dinner! We're having 'Mom needs to go grocery shopping, throw together a smorgasbord' dinner.
Bruchetta is one of my all time faves. I really hope we get some tomatoes this year with this crummy weather.
I love it with feta sprinkled on the top.
This really looks amazing and it's making my mouth water.

This is my idea of summer eating! Looks so delicious. A little salad, a glass of vino, and there you are! In fact we have something similar to this (but not really) at our favorite Italian restaurant Bravo! all the time. I like lite meals in hot weather.

This bruchetta recipe is wonderful. I made it last week for extended family to celebrate our Mother's birthday, should would have been 93 on 8/9 and passed just before Christmas. It is wonderful. I followed the recipe exactly and it came out perfect. People wanted more of it and not the rest of my wonderful meal! Thank you!!
