Eggplant Parmesan

Thank you all for your kind comments on my last post in which I bragged about the eggplants I grew. Some of you asked if I’m going to show them cooked. And I thought I should!

I’ve been using this Eggplant Parmesan recipe for a few years now. It’s quite simple, and my husband says it tastes just the same as at an Italian restaurant.

eggplant parmesan

3 eggplant, peeled and sliced about ¾ inches thick
2 eggs, beaten
4 cups Italian seasoned bread crumbs
6 cups spaghetti sauce, divided
1 (16 ounce) package mozzarella cheese, shredded and divided
1/2 cup grated Parmesan cheese, divided
1/2 teaspoon dried basil
Preheat oven to 350 degrees F.

Dip eggplant slices in egg, then in bread crumbs. Place in a single layer on a baking sheet. Bake in preheated oven for 10 minutes on each side.

In a 9x13 inch baking dish spread spaghetti sauce to cover the bottom. Place a layer of eggplant slices in the sauce. Sprinkle with mozzarella and Parmesan cheeses. Repeat with remaining ingredients, ending with the cheeses. Sprinkle basil on top.

Bake in preheated oven for 35 minutes, or until golden brown.

You are a slendid gardener and cook!! I love eggplant parmesean, and Mmmm you still have basil (I am a little jealous:-)
Your garden pics below are gorgeous, a giant tomato, yummy yummy!!
Our year was so cold we really only had cherry tomatoes, but there is always next year, haha!!

Hello Olga. thank you for becoming a member on blog 'Relics and Tales'. It is great to meet you. This recipe looks wonderful and I will certainly try it as we love eggplant and vegetarian dishes. Your eggplants were picture perfect. They made a delicious looking dish. I will have a better garden next year they just took out a good deal of trees that shaded half of the garden. Hope I get my produce this pretty! Have a great week!

Hi Olga,
I'm so glad you posted this recipe..I'm going to make it real soon. My hubby loves eggplant and my eggplant lasagna came out great, but it's all I knew how to make with eggplant...now I can try this..eggplant is a must have now in our family..love,love,love it....
